Easy Holiday Dessert - Pecan Pie Surprise!




Why the surprise? Well, there are several reasons. First, one of the ingredients used is

typically not part of a traditional pie recipe. Second, unlike many desserts this one is actually balanced with nutrients for better hormone health (check the nutrient profile below).

Third, what you can't see on the nutrient profile is the phytonutrient (plant) properties, like anthocyanins (responsible for better blood flow - antioxidant, anti-tumor, anti-inflammatory, blood sugar regulator...). Fourth, it is versatile and can be used as a smoothie, pudding, or frozen treat/dessert - basically, whatever you like! Finally, it's delicious! It is taste tester approved, but most importantly, it's Dietitian approved!

Ingredients

1/2 cup Pecans, chopped

1 cup Japanese purple sweet potatoes (cooked, peeled, cooled, and diced)

2 tsp vanilla extract

1 tsp agave nectar

1 1/4 cup organic soy milk

1/4 tsp cardamom spice


Directions

Add all the ingredients to a blender or food processor. Blend until smooth.

Add evenly in cupcake pan, place in freezer, and enjoy as a frozen desert or try it room temperature in your favorite jar!
