Globally, heart disease is the leading cause of death. Women are impacted the most by heart disease, as it is the number one killer of all women but black women are affected at a higher rate compared to other races. If you have high blood pressure, high cholesterol, diabetes, are overweight/obese or if you smoke your risk for heart disease significantly increases.


While it is black history month, research shows us that women, specifically black women, carry a large burden to excel in the workforce, take care of the home, their children and are even caretakers of their aging parents or grandparents. This additional stress increases health risk as persistent and uncontrolled stress leads to inflammatory pathways in the body.


Black history month celebrates the African Diaspora achievements and acknowledges their struggles and adversity to achieve equality.

Our sweet potatoe pie has no cholesterol and is significantly less in saturated fat and sugar than traditionally sweet potaote pie since it has no eggs, milk or butter.



Ingredients

  1. 9 inch pie crust gluten free

  2. 15 oz ( ~1 and 3/4 cup) sweet potato puree (baked)

  3. 1/8 tsp Cardamom

  4. 1 tsp vanilla extract

  5. 6 tbsp acquafaba

  6. 3 tbsp cornstarch

  7. 3 tbsp gluten free flour

  8. 1/4 cup agave nectar

  9. 1 tbsp coconut oil

  10. 1 tbsp walnut oil


Directions


  1. Wash, dry and slice sweet potatoes in half and place face down in a baking pan. Baked at 200 degree F for about 90 minutes or until soft and tender.

  2. Transfer sweet poatoes to large mixing bowl. Add the wet then dry ingredients. Stir well.

  3. Bake in oven on 350 degrees F for about 45 min. Use knife to stick into pie. If it comes out clean it is ready to remove from the oven. Cool for 15-30 minutes and enjoy.


    Nutrition Analysis:

    Serves 8, 1 slice provides ~ 255 calories, 32 grams carb, 8 grams sugar, 12 g fat (4 g Saturated fat), 3 g fiber, 0 cholesterol, 3 g protein, 145mg of sodium.
